Banana Crumb Cake

A moist banana crumb cake with a tasty layer of oat-free crumb topping, baked right on top. Drizzled with a sweet powdered sugar icing.

Banana Crumb Cake

What a delicious way to use up those 3 ripe bananas that were sitting on the counter! With all that crumbly iced goodness we couldn’t wait to cut into this cake! Since bananas are one of the ingredients, I would consider this to be a fine option for breakfast, or brunch. It was also a good after-school snack! After a long day of learning new things, our son, was able to have a slice with a cold glass of milk. Then we were off to soccer practice.

Be sure to use bananas that have just hit the ripe stage. Overly ripe bananas can create a gummy texture in this cake.

Banana Crumb Cake – Makes a 13 x 9 inch pan  

  • 1 cup sour milk 
  • 1/4 cup apple sauce
  • 6 Tablespoons butter softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup mashed bananas (3 medium)
  • 1/4 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 1 1/4 teaspoon baking powder
  • 1 cup white whole wheat flour – sifted
  • 1 3/4 cup all purpose flour – sifted

Crumb Topping:  My easy crumb topping recipe

  • 2 cups all purpose flour
  • 1 cup powdered sugar
  • 3/4 cup brown sugar
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1 stick butter cubed (8 Tablespoons)

Icing:

  • 1 cup powdered sugar
  • 2 Tablespoons water
  • 1/4 teaspoon vanilla

Step One: Preheat the oven to 350 F degrees. Spray 13 x 9 inch pan with cooking spray, set aside. Prepare sour milk: pour 1 Tablespoon of lemon, or lime juice with 1 cup warm milk (vinegar may also be used in place of lemon/lime juice), allow to stand 5 minutes.

Step Two: Make crumb topping – place flour, powdered sugar, brown sugar, sea salt,and cinnamon into a bowl. Cut in the cubed butter and mix until it forms together and large clumps are made (use your hands to incorporate the butter). Set off to the side.

Step Three: Make the cake batter – cream the softened butter and sugar together. Beat in the eggs and vanilla. Pour and mix in the sour milk and apple sauce. Mix in the mashed bananas. Stir in both flours that have been sifted, salt, baking soda, and baking powder. Pour the cake batter into prepared pan. 

Step Four: Sprinkle the crumb topping evenly over the top. Gently press topping into batter. Bake in preheated oven for 40 minutes. Allow to cool before adding the icing drizzle.

Step Five: Make icing: Combine the powdered sugar, water, and vanilla together. Mix until smooth. Drizzle over cooled banana crumb cake.

Notes: Buttermilk may be used in place of sour milk.

You can substitute all purpose flour for the white whole wheat flour.
