Change up your breakfast routine and bake a batch of banana oat whole wheat muffins. Made with white whole wheat flour. Which means the muffins have a milder flavor and you’ll get all the benefits of whole wheat flour. These muffins make a delicious and healthy option for the entire family. Add some fresh fruit and yogurt on the side – for a satisfying breakfast, brunch, or snack.

Banana Oat Whole Wheat Muffins – makes 6 jumbo muffins   

  • 1 stick (8 Tablespoons) butter melted
  • 2/3 cup sugar
  • 1 egg
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla
  • 2 ripe bananas – mashed
  • 1/4 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2/3 cup quick oats
  • 1 1/4 cup white whole wheat flour

Oat Topping:

  • 1/4 cup quick oat
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon

Icing Drizzle:

  • 1 cup powdered sugar
  • 1 Tablespoon water

Step One: Preheat oven to 375 F degrees. Spray a  jumbo (6 cup) muffin baking tin with non-stick cooking spray, set aside.

Step Two: Whisk together the melted butter, and sugar. Add in the egg, milk, and vanilla. Stir in the mashed bananas.

Step Three: Add cinnamon, baking powder, and baking soda. Stir in the oats, and flour. Evenly pour batter into prepared muffin tin.

Step Four: Prepare oat topping: Mix oats, sugar, and cinnamon together. Sprinkle over the tops of muffins before baking. Bake jumbo muffins for 25 minutes in a preheated 375 F degree oven.

Step Five: Prepare icing drizzle: Mix the powdered sugar and water together, until a smooth consistency is reached. Allow muffins to cool before drizzling with the icing.

      Thanks Sandra!

      They don’t last long enough in our house to freeze. If you do plan to freeze them – wrap them individually, and store in a freezer safe bag.
