Gluten Free Funfetti Banana Bread (with video)

An easy recipe for gluten free funfetti banana bread, a fun twist on traditional banana bread. Made with rice flour and sprinkles, which add splashes of color in each slice! More sprinkles, and sugar, are added to the top for a delicate candy crunch.

Gluten Free Funfetti Banana Bread

This banana bread is so tasty! We went through 2 loaves of this bread in four days! The bread bakes up nice and tall, with pretty specks of color peeking through. Your eyes are drawn to the funfetti slices and you can’t help but smile when reaching for one.

Gluten Free Funfetti Banana Bread – Makes one loaf 

  • 1/3 cup butter (melted)
  • 2/3 cup sugar
  • 2 eggs
  • 3 bananas (mashed)
  • 1/4 cup milk (I used almond milk)
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon pink salt
  • 2 cups white rice flour
  • 2 Tablespoons jimmy sprinkles

Topping:

  • 1 1/2 Tablespoons jimmy sprinkles
  • 1 Tablespoon sugar

Step One: Preheat oven to 350 F degrees. Grease a standard loaf pan and set aside.

Step Two: Mix the melted butter and sugar together. Add in the eggs, milk, and then the mashed bananas. The baking soda, baking powder, and pink salt, can be added to the mixture. Mix in the rice flour and jimmy sprinkles. 

Step Three: Pour batter into greased loaf pan. Evenly sprinkle the 2 Tablespoons of sprinkles and 1 Tablespoon sugar, to the top of the batter in loaf pan. Bake in the preheated oven for about 1 hour and 5 – 10 minutes. Allow to cool and enjoy.

Note: Every oven bakes differently. Be sure to insert toothpick into the center of bread to check if fully baked. If uncooked batter is seen on the toothpick, bake for another 10 minutes – or until bread done.

    It’s a great idea for children’s party and it’s also useful to make my kids can eat bananas, you know kids don’t like fruit and vegetables but with these colorful bread, I’m pretty sure my kids when be happy everytime I make them.

    this is an easy recipe for gluten free funfetti banana bread, but there are many kinds of cakes that can not be used with a tea, so how about this cake? as you know, cake and tea are ussually in a dinner.
