Halloween Chocolate Chip Cookie Bark

Melted, chocolate chips are spread into a thin, smooth layer. Topped with Halloween candy corn, and broken chocolate chip cookies. And…candy eyeballs looking back at you!

Halloween Chocolate Chip Cookie Bark

This was a big hit with our 6 year old, son! It was a great way to use up chocolate chip cookies, that were baked a few days ago. This was a fun treat. I could’t stop eating this stuff! It was so easy, too. I didn’t have to bake anything, since I already had the homemade chocolate chip cookies. You could also use store bought chocolate chip cookies.

Here’s what I did:

I melted 2 cups of chocolate chips, in the microwave. I spread out the melted chocolate chips onto a non-stick baking mat(on top of a baking sheet). I made a nice and thin layer (you don’t want it too thin, or it won’t hold any of the extra goodies). Placed the broken chocolate chip cookies on top. Along with the candy corn, and candy eyeballs. Allow the Halloween chocolate chip cookie bark to set up, and become firm. I placed the pan in the refrigerator to speed up the process. Cut, or break into pieces. That’s it!

  • 2 cups semi-sweet, or milk chocolate chips (I used milk chocolate) 
  • 1 heaping cup chocolate chip cookie pieces (homemade or store bought)
  • 1/4 cup candy corn
  • candy eyeballs

Step One: Line a baking sheet with a non-stick cooking mat, or parchment paper. Set the pan off to the side. Melt the chocolate chips in the microwave, at 30 second intervals – until smooth. Pour onto the prepared baking sheet, and spread out. 

Step Two: Place the broken chocolate chip cookie pieces on melted chocolate. Place the candy corn, and candy eyeballs, onto the melted chocolate. Place in the refrigerator to firm up the chocolate. 

Step Three: Once the cookie bark is firm, slice or break into pieces. Can be stored in a container, or baggies on the counter. 

Note: You can use a mixture of chocolate chips. You want a thin layer, but you don’t want to see through the chocolate.

For the candy pumpkins: I sliced them in half, and placed on the warm chocolate.
