Let’s grab a handful of mini chocolate chip cookies!

Are you familiar with those tiny, packaged mini chocolate chip cookies? If you have kids, you may understand what I’m referring to. Sometimes, they tend to pop up from school parties and other kids sharing. Once your child likes something, they can point out the package from a mile away, in the grocery store.  Lucky for Landon, I bake plenty of sweets at home. Now, you can bake your own mini chocolate chip cookies!     

These are extremely simple and made with only 8 basic ingredients. You’ll need: butter, brown sugar, sugar, vanilla, baking soda, triple “W” flour (white whole wheat flour), all-purpose flour and mini chocolate chips.  No eggs are needed in this recipe.

Mini Chocolate Chip Cookies for a party!

I reminded our 5 year old, that he needed to sign his Valentine cards, for his classmates.  He said, “You need to make something for me, to bring to my party.” I already had planned to bake cookies, for his classmates. I decided to make mini cookies. Since, they would be receiving lots of candies for Valentine’s Day. Landon, helped place 2 mini chocolate chip cookies in a baggie.  We also added 3 M&M’s inside the baggie, and taped his signed Valentine to the front.  

They looked really cute.  He was so excited to bring them into class!

These mini chocolate chip cookies, are perfect for school lunches!

Mini Chocolate Chip Cookies – Makes 5 dozen (1 Teaspoon cookies)

  • 1 stick of butter – softened
  • 3 Tablespoons brown sugar
  • 3 Tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1 cup white whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup mini chocolate chips

 

Step One: Preheat oven to 350 F degrees and lightly spray a baking sheet with non-stick cooking spray. Set aside.  Cream the softened butter and sugars, together.  Add in the vanilla, baking soda, white whole wheat flour and all-purpose flour.  Mix well.  Stir in the mini chocolate chips.

Step Two: Scoop out 1 teaspoon of dough for each cookie.  Place on prepared cookie sheet.  The cookies won’t spread much. Gently press down each teaspoon of cookie dough, with your fingers. { I made sure my cookie dough was pretty flat, before baing.} Bake in preheated oven for 5 – 7 minutes.  Remove from oven and allow to cool on cookie sheet. Enjoy!
