Red Velvet Banana Bread! Red velvet cake meets banana bread and becomes one!
This red velvet banana bread is a tasty creation! It’s perfect for Valentine’s Day! Red velvet, just screams Valentine’s day. A great treat for a special day with your loved ones. Sometimes we need a little change from our regular banana bread. Change is good when it looks like this! Valentine themed M&M’s help dress up this red velvet banana bread. Marshmallows are also added to the top and get nice and toasted. The bread would be just as delicious without the marshmallows on top.
FYI: You don’t have to wait until Valentines’s day to make this, it can be made anytime of the year. It’ll become a new favorite in your home. For another fun and delicious banana bread, check out my Mexican Hot Chocolate Banana Bread.
Red Velvet and Banana Bread…
We love cake and banana bread, here in our home. I’m also a fan of boxed cake mixes. They’re basically a no fail way to bake a cake. We like the texture of the cakes from the box mixes. So, I grabbed a box from the store. I kept seeing recipes for red velvet desserts. I figured it couldn’t hurt to try and combine the red velvet cake mix with banana bread. I bought a bag of Valentine colored M&M’s and was going to use them in a different recipe. I think they look great right here on this bread. I only ate half the bag, while taking pictures. How can a girl resist “pink” M&M’s?
Red velvet banana bread insight…
This recipe uses very basic ingredients which include: bananas of course, yogurt, vanilla, an egg, an egg white, only 2 Tablespoons oil, sugar, flour, cake mix, baking powder and baking soda. The texture is a moist bread with a cake – like texture. After topping the mixture with the M&M’s, some sank down in the batter. Which added a nice chocolate surprise in each slice. When the bread finished baking and cooled overnight, I pressed on more M&M’s to the top.
Red Velvet Banana Bread – Makes one loaf
- 2 fairly ripe bananas – mashed
- 1/4 cup vanilla yogurt
- 1 egg
- 1 egg white
- 1 teaspoon vanilla extract
- 2 Tablespoons canola oil
- 2/3 cups sugar
- 1 1/4 cups red velvet cake mix – dry
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2/3 cups flour
Topping (optional) :
- 1 cup mini marshmallows
- 1/3 cup m&m’s
Step One: Preheat oven to 350 F degrees. Lightly grease a standard loaf pan (9×5), set aside. In a large mixing bowl, whisk together all the wet ingredients: mashed bananas, vanilla yogurt, egg, egg white, vanilla extract and oil. Combine everything well and whisk in the sugar. Add in the dry ingredients: cake mix, baking soda, baking powder and flour. Whisk everything together until fully incorporated. Pour batter evenly, into prepared loaf pan. If adding the topping: Sprinkle the marshamallows and m&m’s over the top of batter.
Step Two: Place the loaf pan on a baking sheet and bake in preheated oven for 60 minutes, or until a knife inserted middle comes out clean. Tent with foil after the first 30 minutes, if topped with marshmallows. Allow to fully cool, before cutting.
