Skinny Banana Chocolate Chip Muffins

These SKINNY banana chocolate chip muffins are lightened up. With only 2 Tablespoons of melted butter in the entire batch! Made with REAL sugar, vanilla, and a dash of nutmeg. Plus… Mini chocolate chips.

Skinny Banana Chocolate Chip Muffins

My son, and I, love eating these muffins. They come together quick. You only need one bowl. It’s a great way to use up ripe bananas. 

Here’s what I did: Preheat the oven to 400 F degrees. In a large mixing bowl, I mashed up two ripe bananas. Add the melted butter, egg, milk, vanilla, and sugar. Whisk together with the mashed bananas. The baking powder, baking soda, nutmeg, and white whole wheat flour, are added to the banana mixture. Whisk everything together very well. Stir in 1/4 cup of mini chocolate chip. (SAVE 2 Tablespoons of mini chocolate chips, to add on top.)

I sprayed a 12 cup cupcake pan with non-stick cooking spray (No need for cupcake liners). Evenly, divide the muffin batter into the 12 cupcake pan. Sprinkle the 2 Tablespoons of mini chocolate chips over each muffin. Bake in the preheated oven for 10 minutes. After the 10 minutes, turn the oven down to 350 F degrees (Don’t open the oven). Bake for another 15 minutes. Allow the muffins to cool, until you can handle them. Carefully, unmold the muffins from the cupcake pan. Place them on a wired cooling rack to completely cool. Can be stored in a container on the counter, for 2 days. Any longer storage, place in the refrigerator for up to a week.

  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1/3 cup of sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 1/3 cup white whole wheat flour
  • 1/4 cup mini chocolate chips + 2 Tablespoons for topping

Easy muffin removal -> Be sure to spray inside the cupcake pan, before adding the batter. When the muffins are cool enough to touch, gently pry the tops away from the pan. They should easily pop right out.

    These look great. Can I add protein powder to these?

      Hi Sandra!
      You could try to substitute 1/4 or 1/2 of the flour with protein powder. It will alter the texture, but you can try!
